So what is olive oil good for, you ask?
You can use olive oil for much more than a salad dressing! It's long been reported that there are a number of health benefits of olive oil. As a food it has a high levels of monounsaturated fatty acids, which studies show promote good cholesterol (HDL) while lowering bad cholesterol (LDL). Olive oil is also known to be gentle on the digestive system, and even may help prevent gallstones and soothe ulcers. Good quality olive oil contains many valuable vitamins and nutrients, and it is loaded with antioxidants, which many believe help protect the body from cancer.
When using olive oil as a food or on your body always buy organic extra virgin olive oil. Cold pressed olive oil is another high quality product. Extra virgin means that the oil comes from the first pressing of the olives so it retains flavor and nutrients. Cold pressed means that no heat was used in the pressing and it's known that heat will destroy valuable vitamins and nutrients. Virgin olive oil comes from a second pressing and "pure" or "regular" olive oil is refined and chemically processed. These cheaper oils are fine for some of the uses below but the higher quality oils are worth the extra money when you are using it for health and beauty benefits.
